What's for dinner?

I thought I would share with you all some of our family fave recipes of the moment. :)
I was gathering these together for a dear friend and thought you might like them too.
If you have some yummy recipes, send 'em my way! I am always looking for some yummy food to make for my family. I love to cook and try new things. Sometimes I get a little too sensitive, if I'm being honest, because I view food and family dinners as a gift from my heart to the hearts of my family. I have such great memories of home cooked dinners and family dinner table convos and I want to make sure that our girls have those same memories.

Stir Fry
Ingredients:
  • ·         1 Packet of Stir-Fry Seasoning Mix
  • ·         2 Tbsp oil
  • ·         ½ lb chicken and/or beef strips and/or shrimp
  • ·         1 bag of Eat Smart Vegetable Stir Fry mix (in the produce section)
  • ·         Soy Sauce
  • ·         Ginger
  • ·         1 packet of Brown 90 Second Rice
Directions:
  • ·         Marinate meat of choice in Soy Sauce and trace of Ginger or other spice
  • ·         Dissolve mix in appropriate amount of water (according to package directions). Set aside.
  • ·         Heat oil in wok/skillet. Add meat. Stir fry for 2 minutes.
  • ·         Add vegetable mixture and stir fry additional 2 minutes.
  • ·         Stir in seasoning mixture. Cook and stir until sauce boils.
  • ·         Stir fry until meat & vegetables are coated well and sauce thickens.
  • ·         Serve over brown rice and add additional Soy Sauce as desired.

Chicken Parmesan
Ingredients:
  • ·         4 Boneless Chicken Breasts
  • ·         2 Egg Whites, lightly beaten
  • ·         1 cup Fat Free Bread Crumbs
  • ·         ½ cup shredded Parmesan cheese, divided
  • ·         1 ½ cups Low-Fat Marinara Sauce
Directions:
  • ·         Preheat oven to 450
  • ·         Place chicken breasts between 2 sheets of plastic wrap. Flatten to ½ inch thickness.
  • ·         Place egg whites in a shallow bowl and place bread crumbs & half the Parmesan cheese on a plate—mixed together.
  • ·         Dip each flattened chicken breast first in egg whites, allowing excess to drip away, then coat in the bread crumb/cheese mixture.
  • ·         Place chicken on baking sheet coated with nonstick cooking spray.
  • ·         Bake chicken for 15-18 minutes, turning once, until chicken is cooked to an internal temperature of 160.
  • ·         While chicken is cooking, heat marinara sauce in a small saucepan over a low heat.
  • ·         When chicken is cooked, transfer onto plates, spoon sauce over chicken breast, and sprinkle Parmesan cheese on top.

Cheesy Chicken Crock Pot
Ingredients:
  • ·         4-6 Boneless Chicken Breast Halves
  • ·         2 cans Cheddar Cheese Soup
  • ·         1 can Cream of Chicken Soup
  • ·         ¼ tsp garlic powder
  • ·         1 ½ cups uncooked rice
  • ·         Salt & Pepper to taste
  • ·         Dash (or 2) of Paprika
Directions:
  • ·         Spray Crock Pot with non-stick cooking spray.
  • ·         Place uncooked rice in bottom of Crock Pot.
  • ·         In a separate bowl, mix Cheddar Cheese & Cream of Chicken Soups together.
  • ·         Place ¾ of this mixture on top of rice.
  • ·         Press chicken breast halves into the mixture.
  • ·         Put remaining cheese mixture over the top of the chicken.
  • ·         Cook on low 8 hours.
Honey Pecan Chicken
Ingredients:
  • ·         2 Tbsp lite soy sauce
  • ·         2 Tbsp honey
  • ·         2 cups crushed corn flake crumbs
  • ·         ½ cup finely chopped pecans
  • ·         1 tsp salt
  • ·         1 tsp pepper
  • ·         6 boneless skinless breasts (or halves)
  • ·         Non-stick cooking spray
      Directions:
  • ·         Stir together soy sauce & honey, set aside.
  • ·         Combine cereal crumbs and pecans.
  • ·         Sprinkle salt and pepper evenly over chicken breasts.
  • ·         Dip both sides of chicken in soy sauce mixture; dredge in crumbs mixture to coat.
  • ·         Arrange chicken breast in aluminum foil lined baking dish coated with cooking spray.
  • ·         Bake at 425 for 20-25 minutes.
